There raw courgette and flower parmigiana it is a decidedly tasty and summery side dish. It is a preparation based on courgettes and courgette flowers, similar in some ways to the classic courgette parmigiana. The substantial difference lies in the first cooking of the vegetables, which are normally cooked (fried or grilled): in this case, however, all the ingredients are used raw and a single final cooking takes place in the oven. This is possible thanks to the use of small, tender courgettes, the summer ones, to be clear, which can be eaten, in this period, even raw.
The result is extremely fresh and summery, light but super tasty, definitely worth trying!
How to make raw zucchini and flower parmigiana
Clean the courgettes and flowers: remove the ends from the courgettes and cut them into thin slices lengthwise; remove the base and pistils from the flowers and open them (so as to spread them in a single sheet).
Grease the pan and start composing your parmigiana: create a layer of zucchini, add salt, then create a layer of flowers, finally add mozzarella and a drizzle of oil.
Continue like this, creating other layers starting from the zucchini.
Finish with a layer of courgettes, season with a drizzle of oil and then with the grated Parmesan, then cook for about 40 minutes in a preheated static oven at 180 ° C.
The raw zucchini and flower parmigiana is ready: let it rest for at least 10 minutes before serving.
