Orange and chocolate charlotte recipe of 18-11-2011 [Updated on 09-11-2012]
For this weekend I leave you the recipe of a sweet gentleman, the orange and chocolate charlotte, a dessert that I improvised last Sunday with what I had at home, ladyfingers, oranges, gran marnier and the chocolate that I never miss. As I told you, the more elisa grows and the more the cooking time decreases since now she already wants to play and participate in everything and if I want to continue delighting friends and relatives with my sweets I have to try to prepare something more practical and less demanding, so no decorated cakes or laborious sweets for the moment but only things that are prepared in a short time and possibly dirtying as little as possible;) so last Sunday I went to my mom for lunch and I decided, as always, to bring myself the dessert and I opted for this charlotte with orange and chocolate chips which, despite being a last minute dessert, everyone liked, try it and let me know. Kiss us and we read on Monday;)
How to make orange and chocolate charlotte
First we prepare the orange cream.
In a bowl, after having whipped the egg yolks with the sugar, add the starch.
Once you have a cream, pour in the milk, the grand marnier, the filtered orange juice and the finely chopped orange peel.
Mix with a whisk until a smooth cream is obtained.
Pour the mixture into a thick-bottomed saucepan and cook over low heat, stirring constantly with a wooden spoon.
As soon as the orange cream starts to thicken, turn off the heat and mix energetically to avoid lumps.
When the cream has cooled completely, stir in the whipped cream with a bottom-up movement until you get a smooth and homogeneous cream
Prepare the syrup now
Prepare a syrup by boiling the water with the sugar. Add the filtered orange juice and the grand marnier.
Begin to wet the ladyfingers and arrange them as a base in a springform pan.
Trim about 25 ladyfingers to make them as high as the edge of the mold, lightly soak them in the orange syrup on one side only and then arrange them in a palisade around the mold with the sweetened side facing outwards.
Now pour a layer of orange cream on the ladyfingers base, level as much as possible then cover with half the chocolate chips.
Cover with another layer of ladyfingers soaked in the orange syrup. Finish with a layer of orange cream
Level the cream and cover the entire surface with the remaining chocolate drops.
Decorate your charlotte with orange wedges then put the cake in the fridge for at least 3 hours
Now remove from the mold, arrange the orange charlotte on a serving dish, cut into slices and serve
