  • 110g butter
  • 125g plain flour
  • 4 eggs
  • 225g cream cheese
  • 950ml milk
  • 300g instant vanilla dessert mix, such as Angel Delight
  • 340ml double cream, whipped
  • 4 tablespoons chocolate syrup

  1. Preheat oven to 200 C / Gas 6.
  2. In a large heavy saucepan, heat butter and water to boiling over medium-high heat. Add flour and reduce heat to low. Cook and stir until it forms a ball and pulls away from the pan. Remove from heat and transfer to a large bowl. Beat in eggs, one at a time, beating well after each egg.
  3. Spread in bottom and up the sides of an ungreased 20x30cm baking tin. Bake at 200 C / Gas 6 for 35 minutes. Cool completely.
  4. Meanwhile, make the filling. In a large bowl, combine cream cheese and milk and beat until smooth. Add dessert mix and beat until thickened. Spread over cooled base. Top with whipped cream and drizzle chocolate syrup over the top.

This was my first time making anything like this. The choux pastry recipe for the base was spot on. I did not have a tin as described so I made it in a deep round tin (approx. 22cm in diameter). For the filling I used about 200g of cream cheese, 400ml of milk, 1 sachet of chocolate Angel Delight and 1 sachet of butterscotch Angel Delight. This made a nice, thick filling.Topped off with whipped cream and chocolate sauce, I'm very pleased with the results. A bit rough & ready, but then I'm no pastry chef!-19 Jun 2016

I found this rather hard to make. If you are bad at makeing deserts, like I am it's probably best to skip this one. I only used a third of the pastry mix.I found the custard filling to be really runny and also the sauce for me was runny.-28 Apr 2015

A little tip with the cream cheese/milk blending. I noticed that a lof of people have posted complaints about lumps. The trick is to not put the cream cheese with all 4 C. of milk or you will get lumps no matter how high you turn on the blender. Mix all of the cream cheese with a small amount of milk until smooth and slowly add the rest of the milk while blending and the mixture will stay smooth. I hope this helps!-10 Feb 2006


Recipe Summary

  • Coarse salt
  • 4 cups whole milk
  • 8 large egg yolks
  • 4 tablespoons unsalted butter
  • 2 teaspoons pure vanilla extract
  • 1 1/2 cups heavy cream
  • 1 14-ounce box graham crackers
  • 8 ounces finely chopped dark chocolate

Whisk together sugar, cornstarch, and 1/8 teaspoon salt in a medium saucepan. Whisk together milk and egg yolks in a bowl. Add milk mixture to the saucepan, along with butter. Cook, stirring, over medium until mixture comes to a boil. Let boil, stirring, 1 minute. Remove from heat and add vanilla.

Strain pastry cream through a fine-mesh sieve into a bowl. Cover with plastic wrap, pressing it directly onto surface of pastry cream to prevent a skin from forming. Refrigerate until chilled, at least 2 hours or up to 2 days.

Whisk 1/2 cup heavy cream until firm peaks form. Whisk chilled pastry cream until smooth, then fold whipped cream into pastry cream.

Arrange 1/3 graham crackers on the bottom of a 9-by-13-inch pan. Spread half of the pastry cream mixture on top, smoothing it with a spatula to make an even layer. Repeat with half of remaining crackers and remainder of the pastry cream. Arrange remaining crackers on top of pastry cream.

Heat remaining 1 cup heavy cream in a small saucepan over medium-high until just boiling. Pour over chocolate in a small heatproof bowl cover with a plate. Let stand until chocolate melts, then stir until smooth. Spread over graham cracker layer, smoothing top with an offset spatula. Refrigerate to set, at least 2 hours and up to overnight.


Ingredients for Chocolate Eclair Cake:

1 (14.4 ounce) box honey graham crackers (You can use chocolate graham crackers, too, and it will take almost the whole box of crackers)

2 (3.4 ounce) boxes French Vanilla Instant Pudding

1 (8 ounce) container of cool whip

Place a layer of graham crackers in the bottom of a 9 x 13 inch baking dish. Mix the pudding with the milk and cool whip and spread half of it over the graham crackers. Place another layer of graham crackers over the pudding and the rest of the pudding over the second layer of crackers. Add one last layer of crackers on top like in the photos. Add frosting.

1 stick butter or 8 tablespoons or 1/2 cup
1/4 cup cocoa
7 tablespoons milk
1 teaspoon vanilla extract
3 1/2 cups powdered sugar
1 cup nut pieces, pecans or walnuts (optional)

Bring butter, cocoa and milk to a boil in a saucepan on top of the stove. Remove and stir in sugar, vanilla extract and nuts. Spread over cake. Makes 8 to 10 servings.

Note: This is better if you put it in the fridge for 24 hours before serving. You could cut the recipe in half and it keeps well for several days in the refrigerator. We love it with fresh strawberries.


Chocolate Eclair Cake

I swiped this recipe from a friend at work 10 years ago. Very quick and very easy to make, yet tastes decadent and very much like an eclair!

Ingredients

  • 2 boxes Vanilla Instant Pudding (3 3/4)
  • ¾ cups Powdered Sugar
  • 2 cups Milk
  • 1 container Cool Whip (Large 12 Oz Tub)
  • 1 box Graham Crackers (NOT Crumbs)
  • 1 can Chocolate Icing In A Can (Dark Is Best)

Preparation

Mix pudding with milk and powdered sugar (1 cup or less).
Fold in cool whip.
Completely line 9吉 pan bottom with graham crackers.
Then layer half of the cream mixture, another layer of graham crackers, and another layer of cream (the rest of it).
Top with a layer of graham crackers and spread the top with icing (it’s best to warm the icing first and pour it over).

Keep in refrigerator (if there is any left).

*DO NOT USE WHOLE BOX OF GRAHAM CRACKERS. It will dry out the moistness of the “cake”. This recipe uses about 1/2 the box, not whole box.

I’m not generally very into dessert recipes. But, since my husband enjoys his sweets occasionally, this recipe for Chocolate eclair cake is a great choice for summer get-togethers.

So, if you’ve ever had a chocolate pudding graham cracker cake, this one is similar. This recipe for chocolate eclair cake uses vanilla pudding instead of chocolate. But, you could change it up if you want to. And, you can always make homemade pudding if you prefer. In the summer, I prefer to spend as little time in the kitchen as possible.

The chocolate eclair glaze recipe is made from scratch. It’s similar to the glaze that you find on a real chocolate eclair. The rest of the ingredients are ready-made. This means that you can easily customize them for the people you’re serving.

My husband is diabetic so I often use sugar-free instant pudding when I make his desserts. If you like traditional pudding, you can use that. And, if you prefer homemade pudding, that’s good too.

When making this recipe for chocolate eclair cake, the middle layer is whipped topping. You can use your favorite brand. Or, you can make homemade whipped cream and use that.

My personal favorite is Truwhip because it has no high fructose corn syrup. But, if you are concerned about the sugar content, there is a Cool Whip version that is sugar-free you may want to use instead.

What is a chocolate eclair cake?

This recipe for chocolate eclair cake is a no-bake sheet cake that is similar in taste to a real chocolate eclair. The eclair glaze recipe is similar to the chocolate frosting that you would find on your eclair.

The base of this cake is graham crackers. Then, you make layers of the filling which is a mixture of whipped topping or whipped cream, instant pudding mix, and milk.

This is followed by another layer of graham crackers, etc. The whole no-bake cake is topped with a delicious eclair glaze recipe.

How do you make this no-bake cake?

  1. Place a layer of graham crackers in the bottom of a 9吉 casserole dish.
  2. Whisk together pudding mix and milk until thick and creamy, about 3 minutes. Fold in frozen whipped topping until completely mixed.
  3. Spoon half of the pudding mixture over the graham crackers and spread into an even layer. Cover the pudding with a layer of graham crackers and top with remaining pudding in another layer. Top with additional graham crackers to create the final layer.
  4. Place chocolate chips in a medium bowl.
  5. In a microwave-safe cup, heat milk in a microwave until warm, about 30 seconds. Pour milk over chocolate chips and allow to rest until the chocolate has melted. Stir until well incorporated. Using a mixer, beat in the butter. When well mixed, add the confectioner’s sugar and whip until completely incorporated. Continue to mix for an additional 2 to 3 minutes or until the frosting is smooth and fluffy.
  6. Spread the topping over the final layer of graham crackers.
  7. Cover the dessert and refrigerate overnight before serving to allow the crackers to soften.

Variations to the recipe for chocolate eclair cake

If you want a sugar-free or low-fat version of this cake, you can simply use sugar-free instant pudding and sugar-free whipped topping. For the base, look for a low-fat or reduced-fat version of graham crackers.

You can easily change up the flavor of pudding you use in the recipe for chocolate eclair cake. Why not try chocolate or even pistachio. Or, use banana instant pudding and add a layer of sliced bananas to the center. Yum. You could even add extra bananas to the top for decoration.

If you want this recipe for chocolate eclair cake to be gluten-free, you can use a gluten-free instant pudding mix and gluten-free graham crackers. Everything else should be naturally gluten-free.

If you want to try something else besides graham crackers for the bottom, you can use Nilla wafers. These are available in a gluten-free version as well.

If you would prefer not to make the eclair glaze recipe, you can use plain chocolate frosting instead. It’s an easy way to save time. But, I really think the homemade version is best.

Does this have to sit overnight?

Allow extra time when you make this recipe for chocolate eclair cake because it’s best when it sits in the refrigerator overnight. If you don’t want to wait that long, you can cut the refrigeration time down to eight hours. But, I would not use less than 8 hours or more than 24 hours.

Can I freeze this cake?

Yes, this cake can be frozen easily. Just wrap it tightly in aluminum foil. Be sure that the container you put it in is one that won’t break in the freezer. Then, when you want to eat it, you can thaw it overnight in the refrigerator. It will last for about two months in the freezer.


I know I will get this question, and the answer is no, you can absolutely use homemade whipped cream in place of the whipped topping. Just mix up 1 cup of heavy whipping cream until stiff peaks form and fold that into the pudding. 1 cup of cream creates about 2 cups of whipped cream.

You could make this in the morning to serve it for dessert after dinner, but I always recommend letting it chill overnight so the graham crackers have plenty of time to soften. If the graham crackers are soft enough you won’t be able to cut this into nice slices.


Eclair Cake

Eclair Cake is all of the great flavors of an éclair in cake form. This Eclair Cake has a cream puff crust, vanilla cream cheese layer, whipped cream, and a chocolate drizzle. This is hands down my husband’s favorite dessert.

ECLAIR CAKE

This measly corner piece was all that was left after us, our friends, and the missionaries (who made a surprise stop) devoured it.

This was a Father’s Day request from my husband John who loves eclairs. My sister-in-law Kristy made this for us when she came out to visit and we quickly fell in love with it.

It is very light which makes it easy to eat a TON of it! You can make it simple with Cool Whip and Hershey’s syrup (it’s still great this way) or go the extra step and make homemade whipped cream and homemade chocolate sauce to make it unbelievable! This hot fudge sauce is great too on it.

This is my Go To desert for church socials. I like it richer so I leave out the whipped topping and double the pudding. also, zap the frosting in the micro for a few seconds and pour it on. Much easier and looks great.

Weight Watchers had a similar recipe. Not much different than this one.

Love this dessert, but to make it more diabetic friendly I made the frosting out of sugar-free chocolate pudding, 2 heaping tablespoons unsweetened cocoa, 1 cup milk, and cool whip. Still makes a delicious dessert but is lighter with less sugar.

I've been making it since the 70s and have found that if you let it chill for 48 hours, the taste and texture become more eclaire-like. Very, very yummy!

I've been making this since the 70's and is always a great hit. You can substitute vanilla wafers for the graham crackers. When using vanilla wafers you can make this in little individual cups for dessert tables at a party or a bring a dessert tray to a party. It is very rich so most people only eat a small amount.

You do not crush the crackers. most recipes call for that.

I love this recipe. I made cake following instructions, but, microwaved the frosting just until melted. Then poured over cake and chilled. Makes it come out smooth with less mess and no frosting lines.

I love this cake, easy to make and delicious. I beat together one can of Betty Crocker milk chocolate frosting and one container of Cool Whip Chocolate Icing for the icing. You will have leftover but it makes it lighter.

I've made this for the last two holidays due to requests. I found using canned pudding was a time saver. I made it with chocolate pudding but the flavor was weakend so the next time I will give a shot of chocolate sauce into mixture.

I like to add a teaspoon of almond extract to the pudding mixture and before the top layer of graham crackers I ladle on a can of cherry pie filling and about a cup of slivered almonds. YUM!

I have made this recipe for years and my family loves it. A couple of years ago my hand and wrist was damaged in an auto accident and did not completely heal. Sometimes cake batter can be very heavy so I'm not comfortable making a cake without help holding the mixing bowl when pouring the batter into the cake pan. With this dessert I need no help at all for it is a light pudding mixture and my mixing bowl is stainless steel, not heavy glass or stoneware. Another thing I like is no electric mixer is needed, just a whisk and spatula. But the MAIN thing is this dessert is out of this world wonderful! It's hard to just eat one serving. It is a good dessert to take to church dinners, always get compliments on it. Give this one a try. You'll not be sorry.

This has been a family favorite for years. It's best to refrigerate for 12 hours or longer--it's even better 1-2 days after you make it. The graham crackers shouldn't be crisp at all when you serve it. Also, I have found milk chocolate frosting tastes a bit better.

Yes you can freeze this cake recipe for a later date, but, you should serve it frozen not thawed, because the graham crackers will get mushy if you thaw the cake.

Yuk! I totally cannot believe so many people love & raved about this, it's awful. In fact, if my husband didn't like it, it would go in the garbage! I really should have stopped to think - grahams, pudding, whipped topping, canned frosting. what's so special about this? No flavor. Actually, the only thing that tasted like an eclair was the store bought frosting. [BTW, for the girl who inquired, I did peel the foil off the frosting and nuked for 20 seconds and it was very spreadable with an offset spatula]. I think people must just relate this dessert to their childhood or something. Next time, I'll opt for a really good, slightly similar dessert like Slush Cake or just make homemade eclairs.

I don't top this with canned frosting when I make it. Try this: 3 Tbsp. Margarine 2 oz. Unsweetened Chocolate 2 Tbsp. Clear Karo Syrup 3 Tbsp. Milk 1 Tbsp. Vanilla 1 1/2 c. Powdered Sugar Melt margarine and unsweetened chocolate. Add remaining ingredients in the order listed. Mix well. I use an offset spatula to spread the frosting.

I have been making this recipe for about 23 years. My original instructions called for the frosting to be heated in the microwave (metal foil off) for 30 seconds to 1 minute until it is pourable. Pour it onto the top of the cake and it will harden which is another texture. Make sure that you refrigerate it at least an entire day or overnight. It gets better when the graham crackers soften.

This is so easy to fix with so few ingredients. My grandson loves bananas so sometimes I substitute banana pudding with sliced bananas in my layers. I think I'd like to try chocolate pudding sometime. maybe with some mini chocolate chips for something more decadent. Red Hat Gram

Made this according to the recipe and it was a hit! I made it again but had to alter the ingredients a bit by using gluten-free graham crackers. Again it was delicious, and tasted basically the same as it did using the honey grahams. This will be a holiday dessert staple for us!

If you are going to make this it is best to have a GOOD icing. I am so sorry to see that your recipe calls for yucky canned stuff. To make this even better use Cocoa powder, powdered sugar, coffee, and butter. It is wam and melted, soft and flows over the top layer of graham crachers and gets a bit hard :) It is a good thing!

I would like to what amounts of ingredients there is to make this choc. frosting. It sure sounds a lot better.

1 stick butter, softened. 2-3 cups powdered sugar, 3 Tblsp coca, 1 tsp pure vanilla, and 1/2 C strongly brewed coffee. Put all ingredients except the coffee in a big bowl and using either an electric mixer or your stand mixer beat at medium speed adding a tablespoon of the strongly brewed coffee at a time until the frosting is the right spreading or pouring consistency. I have used this frosting on chocolate cakes for years. I got it from my mother and it is delicious!! For a yummy mocha frosting on something, use the same recipe, but leave out the cocoa. Enjoy!

there is a good chocolate frosting recipe on the side of your hershey's cocoa can. Also, substitute chocolate grahams if you are a chocoholic.

This was really good. I have made it 3 times since it was posted a few weeks ago. the last time I made it i did the chocolate on 2 layers instead of the one. and Yummy!! thanks Mr Food for a very simple easy to make dessert.

I made this and it was soooo good! The only thing is that it was a mess when I was cutting it.It was falling apart and the filling oozing out of everywhere , it wasn't firm at all like the video has them all nice and cut up. I made it the day before so it was plenty of time for it to set. Did I do something wrong? Is my refrigerator setting too low maybe? should I put it in the freezer? Any suggestions.

Lisa, I make this all the time for my hubby & boys. I find the key to this is to refridgerate overnight. The graham crakers need time to soften up. I also microwave my icing for up to 30 sec. It makes it so much easier to spread without moving the top layer of graham crakers all over. Hope this helps. Monica

OMG this looks so good. It looks like you can change the flavors by changing the puddings. Good thing "food stamp" recipes are most likely to be easy and delicious. That's what I look for. Don't tend to like the "fancy"ones much.

FOOD STAMP INDEED, don't knock what you have not tried. This is very much like an ice box cake from the 60's and I have made a similar one several times, always to rave reviews. I sometimes use chocolate chip cookies in place of the graham crackers with real whipping cream if I think I can ignore the calories and let set overnight. Chilling is very important One other way is to make and freeze. so light and refreshing

Just made this for a potluck luncheon yesterday. Nothing was left but scrapings around the edge of the pan. This is definitely a keeper. Right up there with 'Two Minute Hawaiian Pie' and 'Million Dollar Pound Cake'!!

I've been making this for years, and it's a super-easy (although it tastes like you worked for hours) family favorite. My son requests it every year as his "birthday cake." One tip, though: I always heat the frosting (I use chocolate fudge flavor) so that it pours on & is much easier to spread. I really liked this recipe. Very easy to make, but be sure to chill the 8 hours to firm the filling and let the crackers soften, or you'll get a gloppy mess trying to remove a slice. The only change I made was using real whipped cream rather than a 'topping' (1 pint of whipping cream) why serve the fake stuff to friends and family?

This was easy to make but, It didn't go over as well as I hoped. I missed read the cool whip. I must have used the 8oz . nnot the 12oz. It wasn't all that GREAT. I did use the Fudge frosting . It just didn't have the I don't know what.

This recipe was easy I'm proud of myself, instead of chocolate frostng i use creamy fudge frosting Yum Yum. Chocolate eclair cake is so good & easy i will use this desert for an family event that will blow them away.

You definitely want to melt the icing for a few seconds. Don’t attempt to spread this on the cake without melting it first. It will make a huge mess and not look smooth.

Just pop in the microwave for a few seconds and you will be able to pour this on the cake. It will give you a beautiful smooth finish and look amazing!
