Beat the eggs and sugar with the mixer on medium speed. Then add the oil and mix until incorporated. Repeat the same operation with milk and vanilla essence. Raspberry heart check.

A perfect recipe for Valentine's Day. This cake is ideal to show your loved one how much you love them, but also to make a sweet surprise.

  • 5 eggs
  • 150 gr. sugar
  • 140 gr. flour
  • 2 tablespoons dehydrated raspberry powder
  • 80 ml oil
  • a pinch of salt
  • 1 teaspoon vanilla
  • 1 teaspoon red food coloring
  • 4 eggs
  • 140 gr. sugar
  • 80 gr flour
  • 30 gr cocoa
  • 60 ml oil
  • a pinch of salt
  • 1 teaspoon vanilla
  • 100 gr. cheese cream
  • 50 gr. soft butter
  • 4 tablespoons powdered sugar
  • 1 teaspoon dehydrated raspberry powder

How to prepare:

Prepare the first cake, the raspberry one: separate the yolks from the egg whites. The yolks are mixed with the oil, little by little, like mayonnaise, until they swell. The egg whites are mixed with a pinch of salt and when they swell well, gradually add the sugar. Beat well until a firm meringue is obtained and the sugar is melted. Put the yolks over the meringue, add the vanilla and mix gently until incorporated. Mix the raspberry powder with the flour and sift into the composition, little by little, and incorporate with a spatula, stirring lightly, from the bottom up. Put the red dye and mix until the intense pink color is obtained. Raspberry powder does not color so well, so food coloring is needed.Also, no baking powder is needed because it will grow from the beaten egg whites. Line a cake tray with baking paper and turn the composition over. Level and place in the preheated oven at 180 degrees Celsius for 40-45 minutes. The toothpick test is done. Remove the cake from the tray, carefully remove the baking paper and leave to cool on a grill, set aside. When it has cooled, cut it into 1.5 cm thick slices. Using a heart-shaped cutter, cut each slice in half. The hearts are kept in the order in which they were cut. Prepare the cocoa cake, just like the raspberry one. The flour is mixed with cocoa and sifted into the egg composition. Place a quarter of the cocoa cake composition in the tray lined with baking paper. Then place the pink cake hearts in the middle, one behind the other, firmly glued together. Put the rest of the cocoa composition around the hearts and on top, level it lightly and bake the cake at 180 degrees for 40 minutes. Make the toothpick test again, remove it from the tray, remove the baking paper and leave it to cool on one side, on a grill. For the icing, mix the cream cheese with the soft butter, add the powdered sugar and the dehydrated raspberries. Coat the cake and decorate as you like with chocolate flakes and dehydrated raspberries.

Cheesecake and raspberry jelly

Mix whole eggs with a pinch of salt and sugar until the eggs lighten in color and double in volume. Add the oil, like mayonnaise, in a thin line, while mixing the eggs. Add the cheese that I crushed with a fork in several tranches, mixing at low speed, until the cheese is incorporated into the dough. With the tip of a knife, cut the vanilla pod horizontally, and with the knife blade we gather the vanilla seeds and add them to the egg foam. The flour is mixed with baking powder and semolina. Add two tablespoons of dry ingredients to the egg mixture, along with 2-3 tablespoons of milk. All this time, mix on low speed until you finish all the ingredients to mix. Put the dough in a cake tin lined with oil and flour. Put the tray in the oven heated to 175 degrees C, for 40 minutes, turn off the heat and leave the tray in the oven for another 10 minutes with the door ajar. Remove the cake from the pan and let it cool until warm.

For the jelly: put the frozen raspberries in a saucepan or kettle together with 3 tablespoons of water. Put it on the fire and let it boil for 10 minutes, until the fruit softens. We pass the fruit through a sieve to remove the seeds. Mix the starch with another 3 tablespoons of cold water, mix with a whisk until the starch is completely dissolved. Pour the diluted starch over the raspberry puree, put it on the fire and stir constantly until the jelly thickens and has the consistency of pudding. Let it cool a bit, add honey, mix and pour the hot jelly over the cake that has about the same temperature. Let cool completely, portion and serve. You're welcome!!
